If you've ever been to True Food Kitchen and tried the Tuscan Kale Salad it was the inspiration behind this recipe. Over the past couple weeks I have been lazy about eating well, but after Memorial Day weekend I made a promise to myself that I would change that, starting by getting back in the swing of making quick, and healthy recipes. This dinner is something I was able to whip up in under 15 minutes with just a few ingredients. It's simple yet flavorful and satisfying.

- GF Bread Crumbs (depends on where you buy them)
- Grated Parmesan
- Fresh Garlic

Ingredients:
- 2 Salmon fillets
- 4 generous handfuls of tuscan kale
- 2 fresh lemons
- GF bread crumbs
- Grated parmesan
- 3 cloves of fresh garlic
- Salt
- Pepper
- Garlic powder
- Olive oil
Instructions:
Coat skillet with olive oil spray, turn heat to medium, then add salmon fillets. Season fillets with salt, pepper, and a bit of garlic powder, then drizzle with juice of half a lemon. After about 4 minutes, when salmon begins cooking through, flip it, and season the other side with salt, pepper, garlic powder, and the other half of the lemon.
While cooking salmon, add 4 generous handfuls of kale to a mixing bowl, drizzle with 1-2 tablespoons of oil, then "massage" kale with your hands. Mince 3 cloves of garlic then add them to the bowl of kale. Next add 3-4 spoonfuls of grated parmesan, and 3-4 spoonfuls of breadcrumbs. Season with a touch of salt, pepper, and the juice of a small lemon. Toss salad with your hands ensuring kale is well coated.
By this time the salmon should be done cooking, remove salmon from heat and plate a top kale salad, drizzle with lemon if you like, and enjoy!
