Work from home has become the new normal for many people, including myself, over the past 10 months. Even if you aren't working from home, you're likely sick of cooking at home. So, I put together a list of my favorite quick, easy, and tasty breakfast and lunch ideas. These meals require minimum prep, work, and clean-up, and are far tastier than the sandwich or salad you pack and bring to the office in normal times.
Andouille Sausage, Peppers, & Onions
Ingredients needed:
- Trader Joe's Smoked Andouille Sausage, thinly sliced
- Mini Sweet Peppers, sliced
- Red onion, sliced
- Olive oil
- Onion powder
- Salt & pepper
- Add olive oil to skillet, and turn to medium heat.
- Then, add sausage. Cook for a few minutes until bottoms are browned, and add in sliced peppers and onions.
- Sauté for another few minutes.
- Season with onion salt, salt, and pepper.
- Add to bowl, and enjoy!
Chicken Teriyaki Bowl
Ingredients needed:
- Broccoli
- Bell peppers, sliced
- Chicken breast, cooked and shredded (I make mine in the crockpot at the beginning of the week)
- Frozen Rice or Right Rice
- Teriyaki or Soyaki sauce
- Olive oil
Instructions:
- Chop your veggies, or, to save time, do this at the beginning of the week.
- Add veggies to a pan with a little olive oil.
- Sauté for a few minutes, then add chicken to pan.
- Microwave frozen rice and add to a bowl. Top rice with chicken and veggie mixture, drizzle with soyaki sauce, and enjoy!
Bacon and Hash Brown Brekkie
Ingredients needed:
- Shredded hash browns
- Sugar-free bacon
- Frozen peppers and onions
- Avocado
- Olive oil
- Cholula
- Salt
- Pepper
- Add shredded hash browns to a foil lined baking sheet. Drizzle with olive oil and season with salt and pepper. Add bacon to baking sheet alongside hash browns, and place in oven. Turn oven to 425 degrees.
- Check bacon after 10-12 minutes. Shift bacon grease to hash browns as much as possible (it helps the hash browns get nice and crispy).
- Once bacon reaches desired crispiness, remove from oven and add to paper towel to get rid of excess oil.
- Continue cooking hash browns. When they are nearly finished, add frozen peppers and onions to sheet pan. Bake until hash browns reach desired crispiness.
- Remove from oven, and add to a bowl with bacon and a thinly sliced avocado. Top with a sunny side up egg or a little bit of cholula for an extra kick.
Garlic Feta Avocado Toast
Ingredients needed:
- Bread
- Avocado
- Feta cheese
- Pistachios
- Garlic olive oil (or use olive oil and garlic powder)
- Sea salt
- Balsamic Vinegar
- Toast your bread.
- Top with thinly sliced avocado, feta cheese, and pistachios.
- Sprinkle with a little bit of sea salt, and drizzle with garlic olive oil. If you don't have garlic olive oil, just use regular olive oil and a sprinkle of garlic powder.
- Finally, top with a very light drizzle of balsamic vinegar.

D's Favorite Salad
Ingredients needed:
- Shredded kale
- Romaine lettuce, chopped
- Cherry tomatoes, quartered
- Chickpeas
- Olive oil
- Salt & pepper
- Protein of your choice (I typically use no sugar bacon but this week I used CAULIPOWER Chicken Tenders)
- Your fave caesar dressing
Instructions:
- Drain, rinse, and dry chickpeas.
- Toss chickpeas with salt, pepper, and olive oil, then airfry for 15 minutes at 400 degrees.
- Add lettuce, kale, tomatoes, crispy chickpeas, and protein of your choice to a salad bowl.
- Toss with your favorite caesar dressing and enjoy!
