Last week I decided to make a recipe using items I already had on hand, which included Gluten Free Breadcrumbs I bought awhile back, a chicken breast, and a whole lot of kale. With these simple and rather plain ingredients, I set out to make something healthy, flavorful, and satisfying. Hence the "healthyish" chicken tenders served with a side of sautéed kale.
These chicken tenders are super easy to make, and unlike the chicken tenders you get at a burger joint, they don't make you feel bloated or sick. While I had my tenders with a side of garlic kale, and buffalo cauliflower (purchased from Erewhon) you could pair them with whatever sides your heart desires.

- Gluten Free Breadcrumbs (use whatever brand you like, I used Aleias as they were the only GF option at my store and they are tasty but expensive)
- Garlic powder
- TJ's Seasoning Salt
- Tumeric
- Eggs
- TJ's GF Flour
- Garlic Olive Oil
- Salt
- Pepper

Ingredients:
- 2 chicken breasts
- 1 1/2 cup gluten free breadcrumbs
- 3/4 teaspoon garlic powder
- 3/4 teaspoon TJ's Seasoning Salt
- 1/2 teaspoon tumeric
- 2 Eggs
- 1/3 cup TJ's GF Flour
- 2 1/2 Tbsp Garlic Olive Oil
- Salt
- Pepper
Instructions:
Remove chicken from packaging and pat dry with paper towels. Slice chicken into tenders and set aside. Place three small bowls in a row on your counter top. Add flour to the first bowl. Crack both eggs into the second bowl and whisk completely. In the third bowl combine breadcrumbs, garlic powder, seasoning salt, turmeric, salt, pepper, and garlic olive oil. Mix breadcrumbs until well coated with oil.
Preheat oven to 425 degrees. One by one dip each tender into flour, then egg mixture, and lastly into breadcrumbs. Ensure each piece of chicken is completely coated in flour before moving onto eggs, and so on.
As you finish dipping tenders lay them on a baking sheet coated with oil, parchment paper, or foil.
Bake tenders for 10 minutes. Flip, and bake for another 10 minutes then remove from oven. Serve with ketchup, ranch, or your favorite dip and enjoy!
