If you follow Eat Fine on a Dime on Instagram or Facebook you might remember my brunch post from a few weeks ago where I got a Mediterranean inspired grilled cheese at a restaurant in West Hollywood. While I loved the concept, the actual meal was a bit of a let down. You couldn't really taste any feta (what cheese is more mediterranean then that), and there wasn't much going on in the sandwich. So this recipe is my play on the concept, and since it has been POURING rain the last 24 hours here in Los Angeles, this grilled cheese was very necessary.

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Servings: 2
Ingredients:
- 2 large slices of Ciabatta or sandwich bread
- A spoonful of olive tapenade
- A generous spoonful of sundried tomatos
- 3/4 block feta cheese
- 3 slices havarti cheese
- 3 strips gyro meat (more if you like)
- Garlic Olive Oil
Instructions:
Add a bit of garlic olive oil to a frying pan and cook 3-4 strips of Gyro meat for 1-2 minutes on either side. Then set aside and pat excess oil off with paper towels.
Slice two large pieces of bread off the loaf, if you are using regular sandwich bread or a small loaf then use 4 pieces of bread. Drizzle one side of the bread with garlic olive oil, then place each piece of bread coated side down in a large skillet. Top one piece with a spoonful of tapenade as pictured below.
Add havarti to both pieces of bread, along with feta, meat, and sun-dried tomatoes. Use a spatula to bring each half of the sandwich together.
Cook on each side for about 4 minutes or until cheese melts. As this grilled cheese is loaded to the extreme, and I didn't have any sort of panini press, I placed a heavy skillet on top of the sandwich to press the sandwich and help everything melt together. If your cheese isn't as melty as you would like, bake it in the oven for a few minutes at 400 degrees.
Slice this monster grilled cheese in half and enjoy! I could barely finish my half, but wow was it yummy. Let me know what you think about this recipe!
