This summer, salsa chicken has become a go-to protein of mine! It's flavorful, but most importantly, it's easy to make, and there's a million different ways to use it.
Salsa Chicken Ingredients: chicken breast, salsa, cholula (if you're using red salsa)
Ways to Use It?
1. Low Carb Salsa Chicken Tacos (Whole30, GF, DF)
Jicama is normally NOT my thing, but I tried the Trader Joe's Jicama Wraps and they added such a nice crunch and flavor to my tacos!

First, prepare your guacamole. Then, slice bell pepper and red onion into thin strips. Add peppers and onions to a skillet with a bit of olive oil, and sauté for about 5 minutes. Next, warm up your jicama wraps or tortillas in a skillet for 20-30 seconds. Add wrap of choice to plate, then top with guac, salsa chicken, peppers, and onions!

3. Salsa Chicken Bowl (Whole30, GF, DF)
You can throw your salsa chicken bowl together any way you like! This one is Whole30 so it simply includes chicken, peppers, onions, and guacamole - but add some cilantro lime rice and beans, and you'll have yourself an unBOWLievably easy and delicious meal!
4. Salsa Chicken Stuffed Sweet Potatoes (GF & DF)
These loaded sweet potatoes are stuffed with green salsa chicken, beans and all kinds of other deliciousness!

🍠 salsa chicken (cooked in green salsa)
🍠 2 sweet potatoes
🍠 1 can black beans
🍠 a bit of yellow onion, chopped
🍠 2/3 bell pepper, chopped
🍠 1/2 can green chiles
🍠 1 cube frozen garlic or 1 clove
🍠 olive oil
🍠 cholula (optional)
🍠 cumin
🍠 paprika
🍠 salt
🍠 For topping: 1 avocado and lime juice
Start by baking two whole sweet potatoes in the oven. When they have about 15 minutes left, add chopped yellow onion and bell pepper to a pan, and sauté with garlic. Once fragrant, turn heat to low, and add a can of drained black beans, along with 1/2 can of diced green chiles. Finally, add shredded salsa verde chicken. Season mixture with cumin, paprika, salt, and some cholula (optional). Add lid to salsa chicken mixture.
Remove sweet potatoes from oven, and scoop out the insides, leaving enough sweet potato on the sides to provide structure. Add sweet potato pieces to salsa chicken mixture, and use a fork to mash sweet potato chunks into smaller pieces. Place lid back on pot, and let mixture sit on low heat. To serve, simply add salsa chicken mixture to sweet potato “boat” and top with mashed avocado!
