This savory breakfast pizza is a great addition to a brunch spread, and while it is definitely tasty, it's rich and filling, so a little goes a long way. I used a Chèvre with herbs, but I would recommend making this with a plain goat cheese, as the herb chèvre has a very strong flavor. I only added a single egg, but would recommend adding at least two especially if you are serving this pizza to multiple people.

Ingredients:
- 1 Cauliflower Pizza Crust
- About 1/3 package Pastrami Style Smoked Atlantic Salmon
- 1/2 an avocado
- Red Onion
- 1-3 eggs (based on preference)
- 1 package spreadable cheese such as Goat Cheese
Instructions:
Preheat oven to 450 degrees. Cut avocado and red onion into thin slices, then set aside. Remove cheese from refrigerator so that it has time to soften (this will make it easier to spread later on).
Once oven is preheated, take Cauliflower Crust from freezer, remove packaging and bake for about 12 minutes. Flip and bake for another 12 minutes, then broil for 3-5 minutes or until crust is crispy enough.
Give crust a few minutes to cool then spread Goat cheese across it evenly. Heat a small skillet (coated with oil if necessary), gently crack eggs into skillet, and cook on medium-high heat for about 4 minutes or until egg white is solid and yolk appears runny. If you aren't a huge fan of raw onion, consider sautéing the red onion for a few minutes while the eggs are cooking.
Then top crust with red onion, avocado slices, and pieces of smoked salmon. If you are planning on serving this as an appetizer I recommend slicing the pizza before adding eggs.
