This Sunday I am doing something a little different, while my recipes are usually pretty simple, they still have a number of ingredients and steps, so I wanted to share one of my favorite weeknight dinners, which has only three primary ingredients and is also really healthy and so quick to make.

- Fresh Atlantic Salmon cut into fillets ($9.74 for 3-4 servings of fish)
- Broccolini ($2.79 for 3 servings)
- Roasted Potatoes ($2.99 a bag will last you a long time)
- Pink Himalayan Sea Salt
- Pepper
- Olive oil
This is my favorite dinner when I have a limited amount of time on my hands but want something healthy, yummy, and filling.
All you need are the items pictured, and a large frying pan. If your salmon is frozen be sure to pull out a fillet to thaw 4-6 hours in advance.
Heat olive oil in the pan for 1-2 minutes, sprinkle both sides of salmon with salt and pepper and add fish to the pan skin side down. Cook for about 3 minutes, flip salmon, then add broccolini and potatoes, and season with salt and pepper. After 3-4 minutes salmon should be cooked through and ready to plate.
Since the potatoes cook from frozen they may take a bit longer, so be sure they are heated through before serving. Leave a comment and let me know if you like these kind of posts or if I should stick to complete recipes!
