I'll be the first to admit, this is not a complex, homemade recipe, it's actually as easy as buying a premade mix, a tub of cream cheese, and some other store bought products. However, it's a fun and creative waffle recipe, as opposed to the standard whipped cream and berries, and is also a great way to incorporate Trader Joe's Brown Sugar and Cinnamon Cream Cheese into your breakfast.

- TJ's Brown Sugar and Cinnamon Cream Cheese Spread ($2.99)
- Sugar ($3.49 for 32 oz)
- Eggs ($1.69/dozen, I buy the half dozen of organic brown eggs and those are about $2.49/half dozen)
- Butter (I used Mikoyo's Vegan Cultured Butter $4.99 but you can use regular butter as well)
- Bananas ($0.19 each)
This butter is not something you need to buy for the recipe, but it is a good find I thought I'd share, so far I've only used it in this recipe, but if you are trying to eat less dairy I'd recommend trying it out!

Ingredients:
- 3/4 cup waffle mix
- 2 spoonfuls Brown Sugar Cream Cheese (plus more for topping)
- 1/4 cup sugar
- 1 egg
- 2 Tbsp butter
- 1 banana
- 1/4 cup + 2 Tbsp water
Instructions:
In a small bowl, whisk together 2 spoonfuls of cream cheese, softened butter (Miyokos is already pretty soft so I used as is), and the egg until the three ingredients are well blended and have a smooth consistency. Make sure not to leave any clumps of cream cheese or butter behind.
In a larger bowl, add waffle mix, pour in wet ingredients (egg, butter, cream cheese), and add water, stirring until batter is well combined. Set aside batter and preheat waffle maker (if you don't have one, try making pancakes).
Coat waffle maker with nonstick spray then add batter (a lot if you're just making one large waffle, and about half if you are making two smaller waffles).
Heat coconut spray, or some kind of cooking oil in a large skillet, then add coated bananas. Be sure to keep an eye on the bananas as they caramelize pretty quickly. Once bananas start to brown, flip them with a spatula.
After about 5 minutes your waffle should be done cooking, plate waffle, add a dollop of brown sugar cream cheese, carmelized banana pieces, and shredded coconut if you like, and enjoy!
