As requested via my instagram page @eatfineonadime, this Sunday I have a dessert recipe for you guys! I am well aware that the holidays are centered on food and familial obligations and because of that, eating well and exercise often go out the window. While this is a dessert recipe, it's one intended to reduce some of that guilt, as the two primary ingredients are bananas and dark chocolate. Dark chocolate is known to have many benefits including the fact that it is rich in iron, magnesium, and copper. But, as with anything, it is all about consuming chocolate in moderation!
Furthermore, this dessert is fun, easy to make, and something you can play around with as the topping options are endless.
What's on your grocery list?
- 4 small bananas ($0.19 each or $0.25 each for organic)
- Pound Plus Dark Chocolate Bar ($4.99) (I used the 72% Cacao bar)
- Peanut Butter (optional)
- Butter Toffee Pretzels ($2.99) or other toppings of your choice
- Wooden skewers or popsicle sticks
Prep Time: 3 hours
Cook Time: 7 minutes
Servings: 4+
Ingredients:
- 4 small bananas (cut in half if you wish)
- 1/2 a Pound Plus Dark Chocolate Bar
- 1-2 spoonfuls of peanut butter
- 1 1/2 cups crushed Butter Toffee Pretzels
Instructions:
Peel bananas, then cut in half or leave whole depending on preference. Stick skewers in, then place bananas on a sheet lined with parchment paper and freeze for 2-3 hours.
After 2-3 hours, bring water to boiling in a small pot. While waiting for water, roughly chop about half of the pound plus chocolate bar into small pieces then add chocolate to a small bowl that will fit on top of your pot, as pictured below. Once water begins boiling, place bowl with chocolate pieces on top, mixing chocolate as it begins to melt.
Crush butter toffee pretzels into smaller bits then spread evenly on a piece of parchment paper. Remove chocolate from heat once it is fully melted and if you like peanut butter I highly recommend adding a couple spoonfuls to the chocolate.
Remove bananas from freezer, one by one coat banana in melted chocolate (I use a spoon to help me cover all the sides as the chocolate will harden very quickly), then immediately roll the coated banana in crushed up toffee pretzel bits and set aside. Repeat until all bananas are coated. Enjoy immediately or place bananas back in the freezer (they'll easily last 3-4 days).
