Every year we have the exact same brunch on Christmas morning. It consists of O&H Danish Kringle (you can now buy the almond flavor from Trader Joes), a fruit salad, and the Christmas Strata my grandma has made for years. Strata is essentially an egg bake that consists of ham, eggs, bread, spices, and more, and best of all it is topped with crunchy corn flakes making it perfect for occasions such as Christmas brunch!
What's on your grocery list?
- 1-2 packages of sliced Gluten Free Bread
- 2 bags (8 oz each) grated sharp cheddar cheese
- Brown sugar (only need 1 Tbsp)
- Worcestershire sauce (only need 1/2 tsp)
- Half a dozen eggs slightly beaten
- 2% milk (you could use lactaid if you have a sensitive stomach)
- 1 med. chopped yellow onion
- 1 pkg good quality diced ham
- 2 cups crushed corn flakes
- 1/2 cup melted butter
- Paprika (only need 1/4 tsp)
- Dry Mustard (only need 1/2 tsp)
- Celery Salt (only need 1/2 tsp)
- Salt
Prep Time: 15 minutes (must freeze overnight)
Cook Time: 1 hour 15 minutes
Servings: 8-10
Ingredients:
- 10 Slices of Gluten Free Bread
- 3/4 lb grated sharp cheddar cheese
- 1 Tbsp brown sugar
- 1/2 tsp Worcestershire sauce
- 1/2 tsp dry mustard
- 1/2 tsp celery salt
- 6 eggs slightly beaten
- 2 1/2 cups regular milk (you could use lactaid if you have a sensitive stomach)
- 1 med. chopped yellow onion
- 1/4 tsp paprika
- 1 tsp salt
- 1 pkg good quality diced ham
- 2 cups crushed corn flakes
- 1/2 cup melted butter
Instructions:
Butter a 9x13 inch glass baking pan, then layer 5 pieces of cubed-crustless gluten free bread, half the package of ham cubed, and half of the cheese (3/4 cup). Add a second layer including the remaining 5 pieces of bread, the rest of the ham, and remaining cheese.
Mix all the remaining ingredients (1 Tbsp brown sugar, 1/2 tsp Worcestershire Sauce, 1/2 tsp Dry Mustard, 1/2 tsp celery salt, 6 eggs lightly beaten, 2 1/2 cups milk, 1 chopped yellow onion, 1/4 tsp paprika, and a teaspoon of salt), except for the corn flakes and butter. Then pour mixture over the ham, bread, and cheese.
Next, melt 1/2 cup of butter in the microwave, remove from the microwave and add cornflakes. Then sprinkle the butter and cornflake mixture across the top of the strata and cover with saran wrap. Refrigerate strata overnight.
Preheat oven to 325 and bake strata for 1 hour and 15 minutes. Cut into serving squares, and serve with fruit or on its own!
