Often times, Ben (my boyfriend) helps me come up with new recipe ideas, especially when I'm feeling uninspired. He has been obsessed with trying to get me to do a vegan pizza for over a month now. Last Wednesday, he finished class pretty late at night, so I decided to finally surprise him with a vegan pizza for dinner. He loved it! I'm excited to share the recipe with you guys. I am not super familiar with vegan replacements so would love to get some feedback from any of you that are!

- Cauliflower Pizza Crust
- Tofurkey Original Italian Sausage
- Miyoko's Classic Vegan Mozzarella
- Vegan Pizza Sauce
- Kale
- Olive Oil
- Salt
- Pepper
Prep Time: 5 minutes
Cook Time: 35 Minutes
Servings: 2-3
Ingredients:
- 1 Cauliflower Pizza Crust
- 2-3 links of Tofurkey Original Italian Sausage
- 1 package Miyoko's Classic Vegan Mozzarella
- Vegan Pizza Sauce
- 2 handfuls Kale
- Olive Oil
- Salt
- Pepper
Instructions:
Preheat oven to 450 degrees. Roughly chop kale into small pieces throwing out stems as you go. Coat kale in olive oil, salt, and pepper, then add to a baking sheet lined with parchment paper or foil.
By this time, the oven should be pre-heated. Bake crust for 12 minutes. Cut sausage into slices, and sauté with a bit of oil for two minutes, then flip tofurkey and cook for another two - three minutes. Once sausage is crispy, set aside and cover.
Flip crust, and bake for another 12 minutes. Then add kale to the oven and cook for 7-10 minutes or until kale is crispy.
Broil crust for an extra 3-5 minutes if it's lacking crispiness. Top crust with about 1/2 cup pizza sauce, Miyoko's mozzarella cut into thin slices, and tofurkey sausage, then bake for another 5 minutes.
Remove pizza from oven, and top with crispy kale.
The Miyoko's cheese is pretty expensive (about $9 for one package of mozzarella). However, after reading online it seemed like one of the better options for a vegan cheese that would do the job on a pizza. The cheese may not get as gooey as regular cheese, but it melts better than any of the other vegan options I've tried and it tastes delicious, especially when paired with the other ingredients.
